A cruise around Manhattan: why the full loop wins on day one
Why does the skyline read like a timeline from the water?
The first hour of the loop sets the thesis. That order is why the cruise works better on day one than day four. On day one the buildings explain themselves. By day four your feet have already connected the dots, and the same view is a recap.
Full loop or harbour lap: which should I book?
Book the full loop. It is the postcard view and it is fine, but it is not Manhattan in the way the full circuit is. The full loop runs about 2.5-3 hours, passes under the Queensboro and Hell Gate Bridges, rounds the top of the island and comes back down the Hudson. Expect to pay around USD 44-55 per adult (estimated) for the basic loop. For a first visit, the price gap between lap and loop is small enough that the full circuit is the obvious choice. A harbour lap only makes sense if you are on a tight schedule or want the statue a few times and nothing else.

Yes on day one, no on day four. Building, the cruise repeats what you know. Skip it when your itinerary is tight. Take it when the skyline is still a blur. The one honest exception is night: after dark, the lighting rebuilds the city, and even familiar buildings look new. If you only take one boat ride in New York, make it this one. If you live here, you already know the answer.
What the dinner cruises really involve
A dinner cruise is a floating restaurant first and a tour second. Expect roughly 2-3 hours on the water, a buffet with carving stations and pasta, and a price in the USD 110-170 per adult range (estimated). The food is decent but not the point. The point is seeing the lit skyline while someone else cleans up. If you care about photography, take an evening sightseeing cruise instead and eat on land. If you care about a reliable meal, eat on land and take the boat as dessert. Dinner boats work best for a celebration or for someone who wants the night view without walking. Just do not confuse them with a serious dinner.

One warning from experience
The coldest July day I have had in New York was on the upper deck of a Manhattan cruise. The river wind is relentless and the boat adds speed to it. My first time I wore shorts and a T-shirt, spent the East River leg shivering below deck, and missed the best part of the ride. Bring a jacket or a hoodie even if the forecast says 30°C. Also, arrive 30 minutes before departure. Boarding looks casual until a large group fills the line and you end up standing at the back. If rain is in the forecast, the covered lower deck fills fast, so make that jacket a waterproof one.
